Hair's to me!

I know your wondering what the heck that means, Right? Starting my Thursday morning off at a local diner for breakfast with the family, I was several bites into my food when I found  a long hair scrambled into my eggs. :O It was over at that point! I had no appetite afterwards. My husband politely told the waitress and they removed the item off our bill. At this point I was looking to see if I saw any hair nets on the cooks, hummmm I did not! what happened to putting your hair back when cooking? Being a former restaurant owner I know the importance of hygiene and wearing your hair back at all times while serving or preparing food. Needless to say I wont be back for awhile. :P

With school back in session here's a great recipe for y'all, who are craving something yummy! This would make a great classroom treat or just a great treat for yourself! HA!

Rice Krispie Bars

10 Cups rice krispy cereal
1/2 cup real butter
2 - 10 oz bags of marshmallows, divided
1 1/2 tsp vanilla
1/4 tsp salt

Line a 13 x 9 pan with foil and then spray with cooking oil.
Add 10 cups of rice krispy cereal to a bowl. Melt butter on low heat in a large pot, add all but 2 cups of marshmallows, add vanilla & salt. cook and stir over low heat until all melted, then add remaining 2 cups of marshmallows. there may be little lumps and that's ok, it will add air in the treats. Pour mixture over rice krispy cereal until coated. Spread into pan.Press firmly into the pan. This is very important. let cool to room temperature, then remove them by lifting the foil out of the pan. Makes 24-30 treats. Yummy! Store in container.

Happy Hump Day!

We are half way through the work/school week and today I was on a mission. First off, check the chickens.... LUCKY me 5 eggs this morning! Thank you Lovely Ladies!!! Why did I never think of having chickens before? Funny story, I went out to see if there were eggs and there was an egg on the ground underneath there boxes, so I turned around to get a bag and believe it or not, that hen tried to hide her egg from me. She actually kicked it to the other side of the pin!! Hummmm. they definitely know when there eggs are gone. HA!
So after the funness in the coop, I decided to finish the cookbook I started for my daughter a month ago. This is a collection of recipes from the family that my Grandma, Mom & some family members have passed down, and OK maybe some I have made up along the way, and thanks to Pinterest, some super yummy recipes! Gosh I love that place (Pinterest). This cookbook will have my Grandma's yummy meatloaf that my family absolutely loves, and always wants me to make extra for meatloaf sandwiches! Who else does that???? are they spoiled or what? :) Also the world famous Oklahoma Main Dish, I'm not sure where the Oklahoma came from, But this is sure good. Let's not forget about those chili cheese wraps. Who has ever had a home made Frito pie and a chili cheese wrap? I think Frito pies are a western thing. So many people I talk to don't even know what the heck a Frito Pie is.....Well, here you go. You make that yummy awesome Chili recipe, I know that you have one, and you enjoy that Chili that first night, then on the second night you get some Frito Chips and Cheese, OK sour cream if you must, and you layer those Frito's in the bowl with Chili and top with cheese and sour cream. OMG!!! The third night you take a burrito size wrap and put all the stuff I just listed and roll that baby up!!!! Frito wrap!!!! So Good, Sonic drive-In use to have them. Why in the world they got rid of them, beats me. :(
My daughter has moved an hour from home and has an apartment with 3 other girls. They are all studying to be nurses. We spent last Saturday moving her in and buying her all the essentials. This is where the cookbook comes into play. My darling daughter can cook!!! WOOHOO! Unfortunately one of her roommates cannot cook at all, and the other one can somewhat, so I thought this would be a great idea for there new home for the next 2-4 years. LOL

Recipes to come soon, I'm going to share a super secret recipe for Banana nut Cake! Shhhhhhhhh. :)

Dinner tonight is going to be a world famous chicken pot pie. NO, I did not cook one of my chickens... I will never eat one. Just the eggs :)))
I baked some chicken in the oven with some spices (garlic, onion powder, salt & pepper) and shredded up the breast and set aside. I combined 1 can of Mixed vegetables, corn and green beans to 2 cans cream of chicken soup and 1 can of milk. I mixed in a large bowl and then added the chicken. I then sprayed my 9 X 13 dish with cooking spray and put 1 pie crust in the bottom and baked it for a few minutes (just to start to brown it), then I poured the yummy mixture onto the pie crust, next layer the other pie crust on top, it doesn't stretch all the way across, but don't worry, it's plenty. poke with a fork several places and bake at 375 degrees for 30 to 45 minutes or until browned and bubbly.  I buy the Pillsbury pie crust, 2 pack.

Who said Salad was boring?



Dinner time came really quick so I had to think of something fast. Salad it was! We've been slacking in this department so Salad sounded great! My daughter hates salad, so be thankful you weren't home for dinner! HA! I started with 3 chicken breasts and cut them in half, lengthwise, you then have 6 pieces. This adds a quicker cooking time. I coated my pan with olive oil and then rubbed my chicken down with Greek Seasoning.We love that taste on chicken!! YUMMY! 
Ingredients:
Lettuce
Black Beans
Fiesta Corn
Tri-Color Tortilla Strips
Chicken
Shredded Cheese
Bacon 
Salad dressing (I like Ranch)
Salad Topping>McCormick Extra Crunch
Chop Lettuce and Slice Chicken and then layer toppings on the lettuce. BAMM! you have a Southwest Chicken Salad. :)

Omg, It's already Tuesday!

I started my day off wondering how in the heck time flies so fast......if your wondering my daughter just left for college 2 days ago and yes I'm having that mom moment. UGGH "laughing" OK crying.... So, I decided to start on my blog today. I have wanted to do this for the past year and never got around to doing it. I'm hoping ya''ll will join in on this journey with me. I came up with this name elevensouthernladies because, we have 8 chickens (my girls, I call them) 3 dogs ( Abby, Tinker my Lil Boy & CoCo my daughters dog) and of course myself living in the house now with my husband, all these girls with 2 boys! It's pretty funny! Today I thought I would share some of the highlights of my backyard farm. haha...









As you can see they have grown so much. We got our girls on March 16,2016. They were a week old and now they are 21 1/2 weeks old today. The eggs pictured above to the right are fresh today and the ones to the left are store bought. They are pretty small, but will be big soon!
The girls have names as you see on the chicken coop above,(Ruby, Red, Nelly, Lunna, Iris, Peep, Buffie & Oppie) they are my highlight of the day. :) Did I mention the fact they are so demanding, just like a man, and moody!!! But, I just can't get enough of them, When I go to the coop there like kids, waiting to see what goodies I have brought to them. It's CRAZY! 
Cleaning the pen is a JOY! HA! ok, why did I ever think that there poop wouldn't be fun to clean up. Well thank you Pinterest for all the information I have found on raising chicks. I couldn't have done it without you!
FYI: My girls love watermelon, strawberries, Alfalfa Sprouts & Spinach. They wait for me everyday for their treats. I will continue to update you on there progress.  What have I done....
