Good Morning people.... I started my day craving a breakfast burrito, so I headed for the kitchen to make my own creation of a breakfast burrito. They are so good but the ultimate place for your morning burro is Golden Pride in Albuquerque, New Mexico. I am lucky enough to enjoy these scrumptious concoction's when I visit my family. They have been serving the Albuquerque area since 1972, and are actually known to have the best Chicken & Ribs! I on the other hand have actually witnessed there home made tortillas, let me just say, slap your mother......they are so good! I am sharing this link, check them out.http://goldenprideabq.com/

Here is my recipe.

Shana's Burro's:

Burrito size tortillas
Scrambled eggs
Shredded cheddar cheese
Fried and crumbled sausage or fried bacon Chopped
Potatoes cooked in oven
Green chill chopped
Salsa

This recipe is so easy. Depending on how many people you are serving will depend on how many eggs you should scramble and the same goes for the meat. There were 3 of us this morning, so I fixed 4 eggs and cooked 1/4 of the sausage and 4 pieces of bacon (for me) and 2 whole potatoes chopped. There was left over potatoes and bacon, but you can save for later.  Start with eggs and layer all ingredients. Warm tortillas before hand.
